

Creamy Chicken Spinach and Feta Pasta

Ingredients
- 1 box of pasta (I prefer penne but any will do)
- 2 tablespoons olive oil
- 3 chicken breasts, diced to your liking
- 3 cloves garlic, minced or equivalent of jarlic
- 4 cups spinach
- 2 cup cherry tomatoes, halved
- 1 cup feta cheese, crumbled
- 1/2 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- Cajun seasoning (I prefer Slap Ya Mama)
- Fresh basil for garnish
Directions
1-Cook the pasta. Boil pasta in salted water until al dente. Reserve 1/2 cup pasta water, then drain.
2-Heat olive oil in a large pot. Add diced chicken, season generously with Cajun seasoning, salt, and pepper. Cook until browned.
3-Add garlic. Stir in garlic and cook 1 minute until fragrant.
4-Add tomatoes & spinach. Add cherry tomatoes and cook until they soften and blistered. Add spinach and let it wilt.
5-Bring it together. Add cooked pasta, a splash of pasta water, and toss until glossy and combined.
6-Add feta. Stir in crumbled feta so it melts slightly into a creamy sauce.
7-Taste and adjust seasoning. Top with fresh basil and extra feta.
