

Easy Shepherd’s Pie Recipe

Serves 4–6
2 lb Ground beef
1 tbsp Extra virgin olive oil
½ tsp Ground thyme
3 cloves Garlic, minced or jarlic
1 large Onion, chopped
To taste Salt & pepper
1.5 cups Peas and carrots (or corn/green beans)
1 tbsp Cornstarch
1 cup Beef broth
1 pouch (8 oz) Idahoan Roasted Garlic Mashed Potatoes
1.5 cups Cheddar cheese, shredded
1 Brown the beef. Heat olive oil in a large skillet. Add ground beef, breaking it up as it cooks. Season with salt, pepper, thyme, and garlic.
2 Add veggies. Stir in chopped onion and peas/carrots. Cook until onions soften.
3 Thicken the mixture. Sprinkle in cornstarch and stir. Pour in beef broth and simmer until thick and glossy.
4 Prepare mashed potatoes. Make the Idahoan potatoes according to package directions.
5 Assemble. Spread the beef mixture into a baking dish. Top with ¾ cup of cheese. Top with mashed potatoes, then sprinkle the rest of the cheddar cheese over the top of the mashed potatoes.
6 Bake. Bake at 400°F for 15–20 minutes until the cheese is melted and golden.
7 Serve. Let rest for 5 minutes, then scoop and enjoy.
