

Sheet Pan Honey Garlic Chicken with Potatoes & Baby Carrots

Ingredients
- 2 lbs boneless chicken thighs
- 2 teaspoon garlic minced
- 1/3 cup honey
- 1/4 cup soy sauce
- 1/2 tsp dried oregano
- 1 tbsp garlic powder
- salt and pepper to taste
- 16 ounces red potatoes halved
- 1 Tbs olive oil
- 16 ounces baby carrots
- salt and pepper to taste
- 2 Tbs chopped fresh parsley for garnish optional
Directions
1. Prep the veggies Toss potatoes and carrots with olive oil, salt, garlic powder, and pepper. Spread on a sheet pan.
2. Mix the sauce Whisk honey, soy sauce, garlic, oregano, salt, and pepper.
3. Add the chicken Nestle the boneless chicken thighs between the veggies. Spoon half the sauce over the chicken.
4. Roast Bake at 400°F (205°C) for 25–30 minutes, flipping the thighs halfway and brushing with more sauce.
5. Finish Broil 2–3 minutes for extra caramelization. Brush with remaining sauce. Garnish with parsley.
