1 lb ground beef

1 tbsp olive oil

1 medium red bell pepper, diced

1 medium green bell pepper, diced

1 medium yellow bell pepper, diced

1 medium orange bell pepper, diced

1 medium onion, diced

3 cloves garlic, minced (or jarlic)

14.5 oz can diced tomatoes with juices

1 tbsp tomato paste

2 tsp Italian seasoning

Salt to taste

black pepper to taste

2 cups cooked rice

Optional ¼ cup chives, chopped

Optional shredded cheddar cheese

Optional red pepper flakes

Instructions

1 Brown the beef. Heat olive oil in a large skillet over medium‑high heat. Add ground beef and cook until browned, breaking it apart as it cooks.

2 Add aromatics. Stir in diced onion and garlic. Cook 2–3 minutes until softened and fragrant.

3 Add peppers. Add all diced bell peppers. Cook 5–7 minutes until they begin to soften.

4 Build the sauce. Stir in tomato paste, diced tomatoes with juices, Italian seasoning, salt, and pepper. Mix well.

5 Simmer. Reduce heat to medium and let everything simmer 5–7 minutes so flavors meld.

6 Add rice. Fold in cooked rice until evenly combined. Taste and adjust seasoning.

7 Finish. Top with chives, cheddar cheese if using, and red pepper flakes. Let cheese melt before serving.
